Rajamangala University of Technology Phra Nakhon (RMUTP) congrats to Mr. Paramet Saisutthi, student from Food and Nutrition, Faculty of Home Economics Technology, RMUTP, has won the 3rdprize of CMAB California Style Division (Freestyle pizza) in International Pizza Challenge from the world pizza-making competition with more than 400 chef contestants of International Pizza Expo 2024 at Las Vegas, Nevada, U.S.A., with score 50.32 of 60.
‘This competition is a world-class competition. As a representative of Thailand, I intended to represent a Thai dish that can represent Thai food identity with a new style on a pizza dough, but still keep a delicious flavor and remind of Thailand. As Thai street foods are well-known and delicious and most tourists around the world want to try and taste them, I think Pad Thai is one of our traditional foods that can bring out the authentic Thai flavor. So, this idea leads me to create ‘Pad Thai Pizza’. For making Pad-Thai Pizza, I cooked the Pad Thai sauce by using the same ingredients as the original Pad Thai and adapted from using Flat Rice noodles to use Neapolitan pizza dough instead which will give a pizza texture of softness, thinness, and stickiness. This competition was quite hard and challenging for me because I am not an expert in making pizza and it was also my first time to participate in the pizza-making competition. So, I practiced very hard, tried trial and error many times, and adapted all classroom knowledge with real cooking experiments to create an appropriate recipe for this competition. I am satisfied with my total score from all 2 rounds which is 50.32 and won the 3rd prize in this competition. This competition allows me to broaden my experiences in pizza-making, choosing ingredients, and techniques from international competitors which is a rare experience. After getting experiences from this opportunity combined with my passion for cooking and bakery, I have planned for my future career to be a bakery owner and teacher for online and offline short courses for international chefs to learn more about Thai cuisine and create Thai Fusion Food spreading worldwide.’ Mr. Paramet Saisutthi said.
